Mackerel are beautifully colored with long, slender bodies. They spend their lives in large schools moving up and down the East Coast. They are known to be fierce fighters when hooked and are a prized game fish.

Mackerel have a delicious, full flavor. The flesh is buttery and flaky. The skin is best when made crispy on the grill or in a hot cast iron pan. For a milder flavor, remove the outer bands of dark flesh along the bloodline.
