African Pompano is a member of the Jack family and close cousin to Greater Amberjack. These mid-sized fish live in warm waters, schooling occasionally and eating crustaceans.

The meat of African Pompano has a buttery, firm texture and is noticeably fatty. The rich flavor makes this fish ideal for marinating or adding a sauce. The large head of the African Pompano makes it a great option for fish stock or fish head curries.
