This simple, Vietnamese inspired blend of spices bring out the best in striped bass.

Ingredients

2 medium Striped Bass fillets

3 tbsp cilantro, minced

2 cloves garlic, minced

3 tbsp fish sauce

1/2 tbsp Agave nectar or 1 tablespoon of sugar

Preparation

Rinse fillets under cold water and remove any scales. Pat dry with a paper towel.

Combine all ingredients in zip top bag and marinate fillets for 15-30 minutes.

Sear over medium-high heat in oiled pan 4 min each side, or until fish flakes.
