SUBSTITUTES Triggerfish

Locals Seafood co-founder, Ryan Speckman, provides this recipe for preparing striped bass, aka striper, aka rockfish.

Ingredients

Medium Striped Bass fillets

1 tbsp olive oil per fillet

1/3 cup finely chopped celery, approximately 1 stalk per fillet

Salt and pepper to taste

1/4 cup finely chopped cilantro per fillet, optional

Preparation

Pre-heat oven to 400 degrees.

Rinse fillets under cold water, removing any scales. Pat dry with a paper towel.

Coat both sides of fillet with oil and place skin-side down on baking pan/sheet.

Sprinkle salt and pepper on filet, then cover with chopped celery. Bake for 15 minutes.
