Who doesn’t love a grilled skewer in the summertime? Add fresh local shrimp and rum – now it’s a party!

Ingredients

For marinade

2.5 lbs shrimp, peeled with tails on

2 tbsp vegetable oil

2 tbsp dark rum

2 tbsp lemon or lime juice

2-3 cloves garlic minced

1/4 tsp red pepper flakes

1/4 tsp salt

For glaze

1/4 cup packed brown sugar

2 tbsp dark rum

2 tbsp oil

Preparation

Mix the oil, rum, lemon or lime juice, garlic, red pepper flakes, and salt together.

Pour this marinade over the shrimp.

Cover, refrigerate and let marinate for 30-60 minutes.

Skewer shrimp. Mix glaze and brush on shrimp prior to grilling/ broiling.

Grill 3 minutes each side or until shrimp is opaque.
