This recipe will work with all kinds of white fish, but we love how the sweet cornmeal compliments the flavors of Bluefish.

Ingredients

2 medium Bluefish fillets

Buttermilk

Garlic Salt

Cayenne

Black Pepper

Blue Cornmeal

Olive Oil

Preparation

Rinse Bluefish fillets under cold water and remove any scales. Pat dry with a paper towel.

Mix buttermilk with garlic salt, cayenne, and black pepper. Soak fillets in this mixture.

Dredge in blue cornmeal.

Heat olive oil in a pan over medium heat. Pan fry the fillets 2 minutes per side, or bake at 350 degrees until flaky.
