2 whole Croaker, scaled and gutted
Extra virgin olive oil
Smoked Sea Salt
Preheat oven to 400 degrees.
Rinse fish under water, removing any scales. Pat dry with a paper towel. Cut 2-3 slits along each side of the fish so it flakes off in big chunks.
Cover in olive oil, smoked sea salt, and chives.
Bake for 20 minutes.
