Bacon and shad roe are a match made in heaven. This simple recipe was submitted by a Chapel Hill Farmers Market customer.


1 set shad roe


Shallots or capers

Canola or vegetable Oil


Rinse roe in water. Remove any hanging membrane. Set aside.

Heat pan to medium high.

Cook 2 strips of bacon per lobe until just crisp. Remove from pan and set aside.

Optionally add tablespoon of chopped shallot or capers to bacon fat in pan. Cook until shallots or capers are soft. Remove from pan and set aside.

Add one tablespoon of butter and one tablespoon of canola/vegetable oil to bacon fat in pan. Add roe for approximately 3 minutes per side. Do not overcook.

Crumble bacon. Put bacon, shallots or capers, and a little salt to the pan. Turn gently, without breaking the roe, to coat the roe in bacon.

Serve and enjoy.
