Traps Bay oysters are named for their home in the New River. Traps Bay is near the mouth of the river, where salty ocean water flows in twice a day at high tide. This increases the salinity in the oyster and tumbles the the shells. These oysters have a sweet, meaty flavor. Enjoy them raw on the half shell or slightly steamed.
