1 Tbsp – olive oil (per filet)
1/3 cup – finely chopped celery (approx. 1 stalk per filet)
salt and pepper to taste
1/4 cup – finely chopped cilantro (optional, per filet)
Pre-heat oven to 400 deg. Coat both sides of filet with oil and place skin-side down on baking pan/sheet. Sprinkle salt and pepper on filet, then cover with chopped celery. Bake for 15 minutes.
