Pan Seared Scallops

1 pound dry sea scallops
1 tablespoon olive oil
Freshly ground black pepper
Kosher salt

Rinse with cold water and pat dry.

Salt and pepper the scallops. Add oil to a large saute pan on high heat. Once oil is heated, gently add the scallops. Sear for 1-2 minutes on each side. The scallops should have a 1/4-inch golden crust on each side while still being translucent in the center. Serve & enjoy!
